I have several baking sheets in my kitchen, all used to some extent. Some have been smearing oven-roasted bacon and reheating pizza for years, while others still display the shiny silver they once were. One of them still looks like new. It is at the bottom of the other baking sheets, protected by a layer of parchment paper. On the rare occasions when it was actually used, it was first wrapped in foil, like a gesù bambino, in an attempt to retain what could be equated with a grill pan’s “new car smell”. It is not passed down from generation to generation. There is nothing special about this pan other than the fact that it looks newer than the others. The only reason it looks newer is because it’s not in use because I want it to keep the new look. This is a stainless steel Catch-22, but lately I’ve been reconsidering how often I use this shiny baking sheet.
It seems that every day there is another cycle of news about the revocation of privileges or rights. Or record heat, or severe flooding somewhere in the world. There is inflation, there is war, there is too much to watch on TV. It’s too much. What if the world collapsed and my life flashed before my eyes and all I could think about was that I never actually used that pan? Why am I keeping it? Life is short and we must take advantage of every opportunity. I vowed to start using this pan. Given that I had the opportunity to coat the metal with so many layers of grease, no amount of dishwashing sponge or lemon juice and baking soda mixture could make it shine again. The brazier has a purpose, and I got in the way. If this pan could talk, it would say, “Use me. Choose me. God, I am a frying pan, and the frying pan will be baked.

Let the mustard make the sandwich special. Believe it or not, there is a shortage of mustard in France right now. You can sell this little jar of goodies on Ebay for more than you pay, but I’m talking about turning an ordinary ham sandwich into an extraordinary jam sandwich. Long live life!
If you have an expensive bottle of bourbon saved for a special occasion, make tomorrow a special occasion. You don’t need to save it for an anniversary or birthday. Celebrate Wednesday because you’re halfway through the workweek and it’s worth it. Life is a challenge and we must face it. We deserve it, and now is the time to properly celebrate small victories. There are no traffic jams on the way home, or does the subway car smell like shoes? joy! Respect that and then open that expensive bottle of Prosecco and serve it with a burger if you like. Seriously, I did this and the burger tasted so much better.

Maybe a slice of birthday cake in the fridge or some saffron on the spice shelf will bring you happiness you didn’t even know existed.
